Fish Nuggets
Inferno Fish Nuggets
Ingredients:
4 pounds fresh fish (black bass, crappie, cat fish)
2 cups flour for dusting
1 ½ cups yellow cornmeal
½ cup all purpose flour
2 tsp. baking powder
1 1/3 cup buttermilk
1 egg lightly beaten
2 T melted unsalted butter
½ cup Patter Fam’s Mango Inferno Sauce
¼ cup frozen kernel corn
1 qt. canola oil for frying
Green onion for garnish
Heat oil to 350 degrees.
Filet fish into 1-2” chunks and dust in the 2 cups of flour. Mix the remaining ingredients in a large mixing bowl. Place fish junks into the wet cornmeal mixture and then gently drop into the oil. Fry for 4-6 minutes depending on the size of your fish chunks until the outside is golden brown. If your batter gets brown too quickly then your oil is too hot, lower the heat and keep the oil at 350 degrees. Remove to a platter and lightly season with kosher salt. Garnish with slices of green onion.
