Potato Salad

Mango Fire Potato Salad

Ingredients:
3 pounds small red potatoes quartered
Kosher salt
1 cup mayonnaise
2/3 cup Patter Fam’s Sweet Mango Fire Sauce
½ cup diced celery
½ cup diced red onion
½ cup chopped cilantro
1 T apple cider vinegar

Directions:

Quarter the red potatoes and bring them to a boil w/ 2 T kosher salt.  Reduce heat to a simmer and cook for 10 minutes until barely tender when pierced with a knife.  Drain in a colander and place the potatoes over the pot.  Cover the colander with a towel and let steam for 15 minutes.

In a small bowl whisk together the mayonnaise, Patter Fam’s Sweet Mango Fire sauce, salt and pepper to taste.

When the potatoes are cooled, transfer them to a large bowl.  Add half the dressing mixture and gently stir it into the potatoes.  Add the celery, onion and cilantro and the remaining dressing and mix thoroughly. 

Add additional salt and pepper if needed and chill for at least one hour for the flavors to marinate.  Serves 6-8.
