Riblets

Ingredients:
1 rack pork spare ribs cut in half lengthwise so you have 2” riblets
3 T paprika
2 T salt
2 T garlic powder
1 T pepper
½ T cayenne
1 T onion powder
1 T dried thyme
Your favorite Patter Fam BBQ sauce or Jamaican Jerk sauce

Preheat oven to 300 degrees.

Mix all the dry ingredients together to make a dry rub for the riblets.  Apply the rub to both sides of the riblets.  Place in the oven and slow roast for 1 hour.  Remove riblets and finish on the outdoor grille.  Baste the riblets with your favorite Patter Fam Sauce and cook on the grille at 350 – 400 degrees for another 10-15 minutes or until ribs are cooked through.  While cooking, turn the ribs a couple of times and re-baste the top side each time to create a thick coating over the riblets.

If you would like to finish the riblets in the oven, then slow cook for 2 hours basting the ribs during the last 30 minutes of cooking.  Glaze the riblets one more time and place them under the broiler for about 5 minutes or until the sauce begins to thicken and crisp up along the edges.

When done, separate the riblets every other rib and pile high on a platter to serve.
