Smoked Pork Shoulder
Ingredients:
8 lb. Pork Shoulder
Pork Rub (recipe below)
2-4 Bottles Patter Fam Barbecue Sauce or Jamaican Jerk Sauce
The night before cooking rub the pork shoulder down with olive oil. Season with the pork rub, patting it on thickly to the meat. Cover the entire shoulder with plastic wrap and refrigerate for at least 12 hours.
Remove from refrigerator 1 hour before cooking. Place the shoulder on the smoker at 250 degrees. Smoke for one hour and then begin applying your favorite Patter Fam Barbecue Sauce or Jamaican Jerk Sauce. Mop on more sauce every 45 minutes. Smoke for approximately 8 hours (1 hr. per pound) or until the internal temperature reaches 180 – 200 degrees.
Pork Rub:
¼ cup cayenne
¼ cup paprika
¼ cup oregano
1 cup brown sugar
1 T cumin
3 T garlic powder
2 T onion powder
3 T kosher salt
1 tsp. sage
1 T rosemary
Mix together and store in an air tight container for up to 1 month.
