Black Bean and Mango Salsa
1 cans black beans rinsed and drained
1 mango, peeled and medium diced
1/4 cup chopped red onion
1 jalapeno, seeded and finely chopped
1/2 Tablespoon fresh lime juice
1 tablespoon vegetable oil
1/4 cup chopped fresh cilantro
1 1/2 T Honey
Salt and freshly ground black pepper
Toss all the ingredients together in a large bowl. Season with salt and pepper and refrigerate at least 1 hour before serving. (We won’t be letting it set for 1 hour)
Serve with blue corn tortilla chips
