Patter Fam Sauces

Fried Plantains 

(Prep time 10 minutes, cooking time 10 minutes)
Serves 6-8
2 large plantains
1 cup canola oil
(Ice Cream)

With a paring knife, slice both ends of the plantain off and gently slice through the skin lengthwise being careful not to cut deeply into the fruit.

Slice the plantain on a sharp diagonal to make long chips about ¼” thick.

In a large skillet, heat the oil to 350-375 degrees.  Gently place the plantain slices into the oil for 2-4 minutes each side or until golden brown.  Flip over and brown the other side.  Remove to a paper towel to drain and immediately sprinkle granulated sugar over the chips.

In a small bowl, place 1-2 scoops vanilla ice cream.  Place 4-5 chips around the side of the bowl while still warm.  Dust the chips and ice cream with cinnamon.  And added sweet treat would be to drizzle with honey.  Garnish with a mint leaf.
