Patter Fam Sauces

Roasted Vegetables 

2 Zucchini – sliced and quartered
1 head Cauliflower
8 oz. Button mushrooms
1/2 red onion sliced
8 oz. Cherry tomatoes
4 T Olive oil 
1 cup Green Olives 
Basil chiffonade for garnish 
Salt & Pepper to taste 
Grated parmesan cheese


Oil zucchini, cauliflower, mushrooms, onions and tomatoes in a large bowl.  Season with a little oregano, thyme, salt, and pepper.  Roast in a 450 degree oven for 30 minutes on a sheet pan.  Toss about half way through the cooking process.  Remove and toss together with some additional olive oil in a bowl with some sliced and whole green olives.  Serve as a side to entrée.  Garnish with a little grated parmesan cheese and a chiffonade of basil.
