Patter Fam Sauces

Baked/Toasted Pita Chips 
Makes 48 chips
4 whole pita pockets
4 oz. olive oil
Seasoning
Salt
Pre-heat oven to 400 degrees.
Cut pita in half, slip a sharp knife into the pocket and slice the pocket in half yielding 4 half slices.  Cut each piece into three equal triangles.
Brush a cookie sheet with olive oil.  Place pita chips crust side down.  Brush other side with olive oil.  Season with lime juice and chipotle pepper or with mesquite seasoning.  Lightly salt.  Place in the oven for 10 minutes.  Remove and turn chips over and bake another 3 minutes until crispy.  Serve with Hummus
