Large bag of salad greens (10 oz. or more)
½ cup walnuts or pecans
2-3 large navel oranges jeweled
2-3 large grapefruit jeweled
½ cup sliced red onion
¼ cup olive oil
2/3 cup freshly squeezed orange juice
¼ cup white sugar
2 T balsamic vinegar
2 tsp. Dijon mustard
½ tsp. black pepper
½ cup feta cheese
Jewel the citrus in advance and refrigerate at least 30 minutes.
Mix olive oil, orange juice, white sugar, balsamic vinegar, Dijon mustard, and black pepper in the bottom of a large bowl with a whisk until all ingredients are emulsified.
Add salad greens, citrus slices, onion slices to the bowl and gently toss to combine thoroughly. Sprinkle the top with feta cheese and serve
