Patter Fam Sauces

Plantain Flambé 
3 cups diced plantains
1 stick of unsalted butter
1 cup brown sugar
2 oz. bourbon
1 T cinnamon
½ tsp. allspice

Peel and dice plantains into 1/4” pieces.  In a large skillet over medium high heat melt 1 stick of butter.  Add 1 cup brown sugar and plantains.  Stir until sugar and butter are melted and a nice sauce is created.  When plantains are heated through and softened, pull the skillet off the flame and add the bourbon.  Light the sauce with an open flame carefully.  Turn off burner.  As the alcohol is burning off, toss a healthy pinch of cinnamon and allspice onto the flame to create fireworks.  Extinguish the flame or let it burn off.  Add the remaining cinnamon and allspice.  Stir to incorporate.  Serve hot over ice cream.
