Patter Fam Sauces

Jamaica Cake
2 cups white sugar
1 ½ cups vegetable oil
1 ½ cups chopped walnuts
3 cups AP Flour
2 plantains or under ripe bananas peeled and diced
3 eggs
1 – 20 oz. can crushed pineapple
1 tsp. Vanilla Extract
1 tsp. salt
1 tsp. baking soda
Mix together sugar, vegetable oil, chopped walnuts, flour and plantains in a 13x9 pan.  Stir in the eggs, pineapple (w/ juice), vanilla, salt and baking soda.  Mix well but don’t mash the plantains.
Bake in a 350 degree oven for 60 minutes or until the cake is done.

Sweet Caribbean White Sauce
1/2 cup  sugar 
3 tablespoons  light brown sugar 
1 tablespoon  all-purpose flour 
Dash of ground nutmeg 
1   large egg
2 tablespoons  butter
1 1/4 cups  whipping cream
1 tablespoon  vanilla extract
2 oz. rum
Whisk first 7 ingredients in a heavy saucepan; cook over medium heat, whisking constantly, 10 to 12 minutes or until thickened. Remove from heat; stir in vanilla and rum. Serve warm or at room temperature.
