2 cups AP flour
½ tsp. baking soda
1 ½ tsp baking powder
1 tsp salt
1/3 cup shortening
3/4 cup buttermilk
Preheat oven to 475 degrees F.
Thoroughly mix the dry ingredients together. Cut in the shortening using your fingers to incorporate the flour mixture and shortening until it feels like coarse sand. Add the buttermilk and stir until it forms a dough that pulls away from the bowl.
Turn it out onto a floured surface and gently bring the dough together and then pressing down until it is consistently about ¾” thick.
Use a small round biscuit cutter to cut the biscuits. Place biscuits on a pizza stone so that they are slightly touching each other. Bake 18-20 minutes or until golden brown.
