Herb Roasted Red Potatoes
4 lbs. small red potatoes
Finely chopped herbs – rosemary, parsley, thyme
1 T salt to taste
2 tsp. pepper to taste
2 oz. olive oil 

 

Half or quarter red potatoes into 1” sized chunks.  Place in a large bowl.  Drizzle potatoes with 2 oz. olive oil.  Sprinkle herbs, salt and pepper over the potatoes and toss to coat evenly.  Place on a baking sheet and roast in a 375 degree oven for 45 minutes until crispy on the edges and tender in the middle.
