Baked Chicken Nuggets
Baked Chicken Nuggets (serves 12)
(Prep time 10 minutes. Cook time 12 minutes)
4 large egg
1 1/2 cup buttermilk
5 pound boneless skinless chicken breast, cut into bite size pieces
6 cups panko bread crumbs
1 teaspoon paprika
2 teaspoon garlic powder
Salt and pepper to taste
Whisk the egg and buttermilk in a medium bowl. Soak chicken pieces in egg mixture while you gather remaining ingredients.
Meanwhile, in another shallow bowl combine panko with paprika, garlic powder, and salt and pepper, to taste. Set a rack on a cookie sheet lined with paper towels.
Lift chicken from buttermilk, letting excess liquid drain back into the bowl, then dip into panko and turn to coat on all sides.
Place the nuggets on a racked baking pan and bake for 10-12 minutes at 450 degrees turning over halfway through. Transfer to a rack to cool.
