Patter Fam Sauces

Twice Baked Potatoes
6 baking potatoes, baked and flesh removed and mashed
1 cup sour cream
½ stick clarified butter
3 T minced garlic
Salt and Pepper to taste
½ cup shredded Cheddar cheese
4 T dried Chives
Bacon bits from 3 slices of bacon

Wash and bake potatoes in advance – 90 minutes at 350º.  Remove and let cool.

Halve the potatoes and scoop out the flesh with a tablespoon.  Reserve the skins for later.

Place the flesh in a bowl.  Add the sour cream, clarified butter, garlic and salt and pepper.  Blend smooth with a mixer.

Spoon or pipe the potato mixture back into the skins of the potato.  Top with cheddar cheese, bacon and chives.  Bake in a 400º oven for 10 minutes or until the potato is heated through and the cheese is melted.
