Rustic Garlic & Sour Cream Mashed Potatoes
5 lbs potatoes
3 cups whole milk
12 T butter
4 T minced garlic
1 cup sour cream
2 tsp. dried chives
Salt & pepper to taste
Wash and cube the unpeeled potatoes into 1” cubes. Cover with water in a large pot, season with a good amount of salt and boil for 10-12 minutes until very tender.
Scald the milk until bubble begin to form along the rim of the pot. Turn off the heat and set aside.
Drain the potatoes and place in a large bowl. Add the butter and coarsely mash them. Add the garlic, sour cream, chives, and milk mixture and mash more thoroughly. Season with salt and pepper.
