Patter Fam Sauces

Southwestern Pasta Salad
1 ½ lbs. Orecchiette Pasta
3 red or green bell peppers, roasted and julienned
1 red onion finely sliced
8 tomatillos washed and quartered
1 cup roasted corn kernels
12 oz. frozen lima beans thawed
1/3 cup white wine vinegar
2 chipotle peppers
¾ cup extra virgin olive oil
Salt and Pepper to taste
½ cup coarsely chopped cilantro for garnish

Place cooked pasta in a large bowl, add peppers, onions, tomatillo, corn and lime beans. Place vinegar and chipotle peppers in a blender and blend until smooth. Slowly add olive oil until emulsified and season with salt and pepper to taste. Toss the salad with the dressing and add cilantro.
