Patter Fam Sauces

 Chipotle/Lime Southwestern Rice 
(serves 12)
1 T unsalted butter
1 T olive oil
1/4 cup diced bell pepper (any color)
1/4 cup diced onion
2 cups basmati rice
4 cups chicken stock (water can be substituted)
1 limes juiced and zested
1 chipotle peppers, rinsed and minced
1 can black beans rinsed
1 tsp. salt
1 T chopped cilantro

 

In a large wok, melt the butter until foamy and add olive oil.  Saute onion and bell pepper until they soften.  Add the rice and stir for about one minute to allow the rice to absorb the flavor.  Add the chicken stock, lime juice, lime zest, chipotle peppers, black beans and salt.  Bring to a boil, then reduce the heat to a simmer and put a lid on the wok.  Simmer for 15 minutes or until the liquid is just absorbed.  When done, add the cilantro, fluff the rice and serve.
