2 lbs. beef, braised and shredded
1 yellow onion thinly sliced
2 garlic cloves minced
12 slices mozzarella cheese
2 avocado sliced
Cilantro for garnish
Cuban appetizer w/ plantains/braised shredded beef and onions w/ mojo sauce
Cut plantains into 1 1/2" to 2" lengths. Partially deep fry to just brown the outside. Remove from fryer and smash into a disk shape about 1/4" thick. Place in deep fryer again to fry through.
Braise seasoned beef and shred.
On a griddle cook the beef with slices of onion, garlic and mojo sauce.
Place a good stack of beef on the tostone, cover with a large slice of mozzarella cheese and place under the broiler to melt and brown the cheese.
Top with sliced avocado.
