Sopapillas4 cups AP Flour
2 tsp. baking powder
1 tsp. salt
6 T shortening
1 ½ cups warm water
2 qts. Vegetable or Canola oil for frying
In a large bowl, stir together flour, baking powder, salt and shortening. Stir in water and mix dough until smooth and pulling away from the sides of the bowl. Cover and let stand for 20 minutes for gluten to develop in the ball of dough.
Separate dough into 2 or 3 smaller balls and roll out on a floured board. Knead the dough for 3-5 minutes. Roll flat until about 1/8” thick. Cut into 3” squares and then diagonally to make a diamond shape. Fry in 375 degree oil until golden brown on both sides. Drain on a paper towel and serve warm with powdered sugar and honey.
