Mexican Chicken Po Boys

8 hoagie rolls
24 oz. chicken tenderloins
1 cup honey
2 oz. Patter Fam Cayenne Sauce
2 tsp. ancho chili powder
3 cups shredded lettuce
3 tomatoes sliced
2 avocados sliced
2 cups Monterey Jack cheese sauce 

Prepare the cheese sauce by making a béchamel sauce and adding the Monterey Jack to make a sauce. 


Béchamel Sauce 
5 tablespoons butter
4 tablespoons all-purpose flour 
4 cups milk
2 teaspoons salt
1/2 teaspoon freshly grated nutmeg
2 cup shredded Monterrey Jack cheese 

In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.


Meanwhile, heat the milk in a separate pan until just about to boil. Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth. Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat. Season with salt and nutmeg, and add the cheese, stirring to melt and combine.


Dredge the chicken in buttermilk and a 50/50 mix of flour and bread crumbs.  Deep fry at 375 degrees until golden brown.



Serve on Hoagie Bun with Shredded Lettuce and Tomato.  Place Tomatoes on bun, then chicken, the lettuce, top with Cheese Sauce and Spicy Honey.
