Patter Fam Sauces

Red Beans and Yellow Rice
Serves 12
3 can of red beans rinsed and drained
3 cups Basmati Rice
2 T Olive Oil
2 T Butter
6 cups chicken stock
1 cup finely diced bell pepper
1 cup finely diced onion
1 ½ tsp. Turmeric
½ tsp. Cumin
Salt to taste 


In a medium saucepan heat olive oil and butter over low heat.  Sauté finely diced bell pepper and onion until slightly softened.  Add turmeric and cumin and heat for about 30 seconds.  Add the rice and stir for about 1 minute to coat.  Add the chicken stock and bring to a boil.  Season with salt to taste.  Cover and reduce heat to a low simmer for 15-20 minutes or until all the water is absorbed. 


Stir in Red Beans and let sit for 5 minutes to warm through.
