Patter Fam Sauces

Pesto Recipe
Makes 2 cups
4 cups Basil
2 T minced garlic
½ cup toasted pine nuts
1 1/3 cups extra virgin olive oil
1 cup parmesan cheese
Salt and Pepper to taste
Place basil, garlic, pine nuts and 1/3 cup olive oil in a blender.  Slowly add the remaining oil.  Remove to a bowl.  Stir in grated parmesan cheese.  Season with salt and pepper.  Can be frozen in an air tight container without the cheese for up to three months.  Thaw and add cheese to serve.
