Pink Deviled Eggs
Soak 3 dozen hard boiled eggs in pickled beet juice (from  2 cans) for 12-16 hours in the refrigerator.  Remove eggs and prepare the filling.

Pimento Cheese Deviled Egg Filling (Makes 24-30 eggs)
Cooked whites from 18 hardboiled eggs that didn’t come out right
1 cup white cheddar cheese (1 block)
1 cup mayonnaise
2 T pickled jalapeno
1 or 2 small jar of pimentos
2-3 dashes of red hot sauce

Reserve about 1/3 of pimentos for rough chopping.  Combine all other ingredients until fairly smooth in a food processor.  Roughly chop reserved pimentos and add to the mixture stirring to combine fully.  Pipe into hollowed out eggs w/ pastry bag.  Chill covered in the refrigerator.

Creamy Avocado Deviled Egg Filling
Cooked yokes from 18 hardboiled eggs
3 avocados
1 cup mayonnaise
3 oz. lime juice
2 T minced garlic
½ tsp. ancho pepper
2-3 dashes Holy Cow Hot Sauce

Combine all ingredients in a food processor until smooth.  Pipe into hollowed out eggs with pastry bag.  Chill covered in the refrigerator.
