Patter Fam Sauces

Bananas Foster 
(serves 8)
½ stick butter
½ cup brown sugar
½ tsp. allspice
½ tsp. cinnamon
4 ripe bananas sliced in ¼” pieces
½ cup bourbon

 

Melt butter in a large 10” skillet.  Add brown sugar, allspice, and cinnamon.  Stir until sugar melts.  Add the bananas and cook for two minutes stirring to make sure both sides of banana slices get browned.  Remove pan from the flame and add bourbon.  Place back over flame to ignite.  Let the alcohol burn off and let the sauce thicken before serving over ice cream.
