Carnitas Especiales
Sautéed pork w/ peppers, onions, mole & queso crumbles

Serves 10)
3 T extra virgin olive oil
2 lbs pork loin or Pulled Pork – cut into thin strips about 2” long or shredded
1 Vidalia or yellow onion, quartered and sliced thin
1 yellow bell pepper julienned
1red bell pepper julienned
2 cloves minced garlic
Salt and Pepper to taste
Ancho chili powder to taste
1 T cumin
1 cup mole sauce
Freshly chopped cilantro for cooking and garnish
10 oz. queso cheese crumbles
Lime wedges for garnish
Avocado slice for garnish

In a large skillet, heat oil over medium heat and sauté onions and pork together for 2-3 minutes.  Season meat and onions with salt, pepper, ancho chili powder and cumin.  Add bell peppers and garlic and sauté an additional 3 minutes until meat is thoroughly cooked and onions have begun to caramelize well.  Add 3-5 tablespoons of freshly chopped cilantro, stir to mix and remove from heat.  Serve hot with a garnish of more fresh cilantro and a sprinkling of queso cheese crumbles.  Garnish with a lime wedge and a few blue tortilla chips.
