Cheesy Bacon Potato Slices

(Serves 8)

4 large baking potatoes cut into ½” thick slices

1/4 cup clarified butter

8 slices of bacon, diced and fried crisp

8 oz. shredded cheddar cheese

1/2 cup chopped green onions for garnish

Preheat oven to 425 degrees.

Brush both sides of the potato slices with butter and place on an ungreased cookie sheet.  Bake about 15 minutes then turn over and bake an additional 15 minutes or until lightly browned.

Remove from oven, top with cheese and bacon and place back in the oven until the cheese is melted.  Garnish with green onion.
