Chipotle Pan Sauce

3 oz. Sherry Vinegar

1 1/2 cup Sour cream or crème fraiche

4 Chipotle Peppers minced

1 T Adobo Sauce

1/2 cup Water

Salt and Pepper to taste

In a large high sided skillet, combine vinegar, sour cream, and water and heat over medium flame until almost boiling.  Add the chipotle peppers, adobo, and stir often for 3-4 minutes.  Season with salt and pepper to taste.

Spoon sauce over the chicken for serving.
