Mexican corn salad

1 – 16 oz. package frozen corn thawed

½ cup chopped cilantro

½ cup diced red bell pepper

½ cup diced red onion

1/3 cup lime juice

2 T minced jalapeno, seeded

1 T olive oil

Salt and pepper to taste

¼ tsp. cumin

¼ tsp. ancho chili powder

2 cloves minced garlic

Combine all ingredients in a large bowl.  Mix thoroughly.  Can be covered and chilled for up to 8 hours.
