4 lbs. Idaho potatoes cut into large fries
Canola or Vegetable Oil for frying
Heat oil to 350 degrees. Flash fry potatoes for about 2 minutes then remove to a tray with paper towels to drain. Cover and let sit until ready to prepare.
Fry potatoes for a second time for 3 minutes or until golden brown and crispy on the outside and still tender inside but hot.
Remove to drain on a paper towel. Salt immediately after removing from oil.
